Pumpkin Soup!


Pumpkin Soup
Serves 6
One of my all time favourite soups! A bowl of this and some toast and I am most happy! :D he he One of the things I love about winter.. soup soup SOUP! ;P 

(Source: recipe card promoting Glad Tuckaway Foil Trays.)

Ingredients
1 tbsp oil
1 med onion, diced
1 potato
1kg pumpkin
4 cups chicken or vegetable stock
1 cup milk
½ tsp ground nutmeg
pinch of ground cardamom
Freshly ground black pepper to taste
Sour cream and chives to serve (optional)

Method
  1. Heat oil in a deep pot and fry onions until soft.
  2. Peel and seed pumpkin and peel potato and cut both pieces. Add onion along with the nutmeg and cardamom. Cook over medium heat for 5 minutes stirring occasionally.
  3. Add stock and bring to the boil. Reduce heat and cook until pumpkin is tender.
  4. Puree in a food processor or blender until smooth. (personally I just use a masher; not fussed with the texture of this soup unless I am serving this to guests.)
  5. Return to pot. Add milk and heat but do not boil.
  6. Serve hot with a dollop of sour cream and a sprinkling of chopped chives and ground pepper.

Coconut Bread!




Coconut Bread (Source: Better Homes & Gardens AUS April 2013)

Prep time: 5 mins
Cooking Time: 55 mins
Serves 10 – 12

Cooking oil spray, for greasing
400 ml can coconut milk
2 eggs
75 ml vegetable Oil
2 ½ cups shredded coconut
1 cup caster sugar
Softened butter, to serve (optional)

  1. Preheat oven to 180°C. Grease a 24.5 x 12cm loaf tin with cooking oil spray. Line base and sides with baking paper. Put coconut milk, eggs and oil in a large bowl and whisk until smooth. Mix flour, coconut and sugar in a separate large bowl.
  2. Pour milk mixture into flour mixture and beat with a wooden spoon to combine. Spoon into prepared tin. Bake for 50-55 minutes or until cooked when tested with a skewer. Set aside for 10 minutes to cool slightly, then turn out onto wire rack to cool completely. Slice and serve with butter if using. (I'd suggest berries or slices of bananas, it will compliment beautifully against the delectable coconut flavour).

Out&About (4) May '13 p 2- Dinner @ Senoritas

PASIÓN MEZCAL
GUACAMOLE
Best Gauc I've ever eaten!!!! BOOM
TOSTADAS DE POLLO
(Small crispy tortilla baskets with marinated chicken,avocado,jalapeno chili,tomato & Red Onion)
PANUCHOS DE CONCHINITA PIBIL
(Slow roasted pork shoulder tacos with cinnamon orange,thyme, frijoles & pickles red onion)

WOW.. JUST WOW!!! Finally tasted the AUTHENTIC Mexican cuisine! Finally! And boy was I just blown way!! Flavour explosion! The Guacamole was just amazing! Got the taste buds tingling! The Tostadas De Pollo was so refreshing! And against the crunchy tortilla basket was a great contrasting texture and flavour! Just loved it! The Panuchos De Conchinita Pibil on the other hand was rich in flavour and that too just blew me away! mmmm Delicious!! 
 (its obvious I'm head over heels in love after eating real Mexican food!! Nothing beats that!!)
The whole atmosphere of the place [Senoritas] was awesome! The music and the gorgeous artwork (I want to punch myself for not taking photos of them and more of the food .. But I felt a tad embarrassed.. was with my bfs friends too ;P.) But yeah it was amazing! 
Would definitely go there again!!!!!  
(gotta thank my friend Ami for taking us there! You are AWESOME!! x)

Out&About (4) May '13 p 1 - Brunch at Tropicana Juice/Food Bar

"South American Special" mmmmm YUMMERS (and how interesting is that pineapple sitting on a ..mortar?! :P )

Simple food + complex drink = Heavenly brunch!!

Yes.. nothing so exciting about toasted egg and bacon sandwiches, but paired up with an amazing fruit juice (and zee bf xP)  it was lovely and just what we needed!! That "South American Special" juice is amazing!!! Packed with Vitamin C and other goodies just wakes you up!! ( its said to not mix the drink just sip it as it is!!! It's delicious!!! ;P

French Onion Soup


( I didn't have french bread so I just used some left over tiger bread and regular bread slices.It doesn't have to be french bread, whatever you prefer!) 


French Onion Soup (Source : "The Little Book Of Soups")

(This soup tastes best the day before it is needed and then reheated as required.)

Serves 4
Prep: 10 mins
Cooking: 45 mins

Ingredients
3 medium onions
60g/2oz butter or margarine
30g/1oz plain flour
1 Litre /1 ¾ pints boiling real vegetable stock or water plus 2 stock cubes
Salt and Pepper

Topping
4 slices French bread, cut crosswise 
60 g/2 oz Cheddar cheese,grated
30 g/1 oz Parmesan cheese,grated
  1. Slice onion very finely into rings.
  2. Melt the butter in a pan, add the onion rings and sautée over a medium heat until well browned.
  3. Mix in the flour and stir well until browned
  4. Add the stock and the seasoning and simmer for 30 minutes
  5. Toast the bread on both sides
  6. Combine both types of cheese and divide between the bread slices. Place under a preheated medium grill, and toast until golden brown.
  7. Place the slices of bread and cheese in the bottom of individual soup dishes and spoon the soup over the top. Serve at once.
