Strawberry Coconut Loaves


The recipe makes 8 small loaves. I just made one big loaf! It's really up to you. Also you can experiment and use different fruit! The skies the limit! :P Oh another thing.. you can use greek yogurt instead of vanilla yogurt.

Ingredients
Melted butter  for greasing
1 1/2 cups self raising flour
1/2 cup shredded coconut
2 eggs
1 cup caster sugar
1/2 cup light olive oil
200g vanilla yogurt
1 punnet of strawberries, washed, hulled
1/4 demerara sugar

1 Preheat oven to 180C. Brush an 8 hole non-stick mini loaf tin with butter. Sift flour into a bowl, then stir in coconut. Beat eggs and sugar in a separate bowl until pale and creamy. Add oil  and whisk until combined. Make a well in centre of the dry ingredients and pour in egg mixture. Add yoghurt and stir with a wooden spoon until combined and smooth.


2 Thinly slice half the strawberries and set aside. Chop remaining strawberries, add to mixture and stir until combined. Spoon mixture and stir until combined. Spoon mixture evenly into prepared loaf-tin holes.

3 Top mixture in each hole evenly with strawberry slices, then sprinkle with demerara sugar. Bake for 30mins or until loaves are cooked when tested with a skewer. Stand for 15 mins before turning out onto a wire rack to cool.
